Lunch: Salad! Honestly, look at this! How can Leslie Knope think that salads are anything less than amazing. I made this one with baby spinach, red romaine lettuce, purple onion, baby tomatoes, black and white beans, and some grilled chicken cubes. Oh, and don’t forget Annie’s (amazing) Lite Raspberry Vinaigrette dressing. THE BEST!
