1-Minute Microwave Coffee Cake by Chocolate Covered Katie
When you need to indulge your sweet tooth after dinner, do it the healthy way. Do it the Chocolate Covered Katie way… The single serving, microwaveable cake way.
This miniature coffee cake is so easy to make it’s almost a crime. Just mix the ingredients in a mug or tiny dish and microwave. Clean eating cake in a minute. Name one thing better. You can’t.
Plus, the recipe is vegan, low in sugar, and there’s a fat-free alternative for those of you who might be looking for low-cal dessert options.

Ingredients for the batter:
3 T spelt flour (or white. For gf: a commenter had success with 1 tbsp rice flour and 2 tbsp almond flour.)
1/4 tsp. baking powder
1/16 tsp. salt
1 stevia packet or 1 T sugar
1 T plus 2 tsp. water
2 tsp oil or melted margarine or applesauce (I prefer the oil/margarine, but that’s simply because I’m not a fan of fat-free baked goods.)
1/4 tsp. pure vanilla extract
Ingredients for the streusel:
1/8 tsp cinnamon
1 and 1/4 tsp sucanat or brown sugar
1/4 to 1/2 tsp oil or melted margarine (once again, use applesauce if a fat-free version is desired)
tiny, tiny pinch salt
2 pecan halves (or walnut halves)
Directions:
Combine dry batter ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Pour half the batter into a mug or mini ramekin, sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Microwave for about 1 minute.

I made this mountain of chocolate deliciousness for my mom’s birthday last night, and figured that maybe you guys would like it if I shared the link to the recipe with you. Because like, honestly, who doesn’t like chocolate cake?
Especially chocolate cake that’s healthily homemade from scratch.
And especially chocolate cake that was dubbed Dessert of the Year by Vegan.com.
If you can’t get down with that, then please, I don’t even want to know you.
True story: I accidentally forgot to add the vanilla extract to the batter while making this, yet it still came out tasting amazing. And I’m not just saying that. My whole family happily ate it and sang it’s praises. If that won’t convince you that this recipe is a winner, than I don’t know what will.
Hopefully next time I make this (and yes, there will be a next time) I’ll make sure to include all of the essential ingredients. I can only imagine how good this cake can really taste when made right :P
