Garlic-basil shrimp with chick peas, broccoli slaw, and tomato basil sauce + garlic-basil roasted eggplant for dinner. I’m obsessed with broccoli slaw and garlic with basil.

Try this for lunch or dinner: sauté 1 cup broccoli, 1/2 cup chopped tomato with diced red onion and 1 tablespoon olive oil. Sprinkle in curry and garlic powder and heat for 3-4 minutes. Add. 1/3 cup black beans and heat for another 1-2 minutes. Wrap vegetables in a whole wheat tortilla wrap and enjoy. (Also tastes great with feta cheese!)

I’ve talked about this idea on Hungry Runner several times in the past. It’s basically become my signature style of “cooking.” When I started this blog it was under the premise that I love to eat but hate spending a ton of time in the kitchen fussing over complicated recipes.
So, while I’m sharing the “recipe” for this dish right now, just know that before I made it… There was no recipe. I made it up as I went along. And also know that you are completely capable of doing the same. Don’t be afraid to experiment with food!
Steamed Kale with Spiced Sweet Potato and Black Beans
How to: Steam a cup or two of kale. Boil a sweet potato. Chop up the sweet potato, two cloves of garlic, and a bit of a red onion. Heat 2 table spoons of olive oil over medium heat and add the garlic and onions. Simmer until fragrant. Throw in the sweet potato, kale, and some black beans, plus another scant tablespoon of olive oil. Spice with turmeric, cumin, and garlic powder while keeping over medium heat and tossing everything around for 4-5 minutes.
Serve hot with a whole grain wrap (if desired.) This dish works great for lunch or dinner both on-the-go and at home!
